
Quinoa Veg Salad
A light yet satisfying salad with protein-packed quinoa and crunchy garden vegetables.

Ingredients:
Base: 3/4 cup Cooked Quinoa.
Protein: 1/4 cup Chickpeas (rinsed).
Veg: Diced Cucumber, Red bell pepper, and shredded Carrots.
Dressing: Lemon juice, fresh Parsley, and a pinch of Cumin.
Instructions:
Combine the cooked quinoa and chickpeas in a large mixing bowl.
Add all the diced vegetables and chopped parsley.
Squeeze fresh lemon juice over the mixture and season with salt, pepper, and cumin.
Toss well and serve chilled or at room temperature.
