
Avocado Power Bowl
A nutrient-dense vegan bowl featuring creamy avocado, fresh greens, and a zesty lemon dressing.

Ingredients:
Base: 1/2 cup Cooked Quinoa, 1 cup Fresh Spinach.
Toppings: 1 ripe Avocado (sliced), 1/4 cup Black beans, 1/4 cup Cherry tomatoes.
Crunch: 1 tbsp Pumpkin seeds.
Dressing: 1 tsp Olive oil, juice of 1/2 lime, salt, and pepper.
Instructions:
Place the spinach at the base of your bowl and add the cooked quinoa on one side.
Arrange the black beans, sliced avocado, and halved cherry tomatoes on top.
In a small cup, whisk the lime juice, olive oil, salt, and pepper.
Drizzle the dressing over the bowl and sprinkle with pumpkin seeds for extra protein.
